These ranges feature a patented power burner, which is a powerful infrared gas heating element surrounding the convection fan at the back of the range. These ranges also feature an infrared broiler capable of 1850 degree temperatures. There are no additional heating elements at the bottom of Platinum Series ovens – just the power burner and the 1850°F infrared broiler. The unique design allows for faster pre-heating times and even consistent cooking results.

Only gas range on the market with True European Convection

Convection is one of the most desired features in a new range, however not all convection is created equally. At it's core, convection cooking is just a fan in the oven that helps to circulate air reducing hotspots for more consistent results (especially when baking), even cooking, and faster cooking times. The best type of convection is called true convection (or European convection). Rather than just circulating hot air, true convection ovens also have a dedicated heating element that is coiled around the fan, allowing the convection fan itself to generate heat. This allows for even more control over the temperature of air being distributed by the convection fan for even more precise consistent temperatures. Unfortunately true convection is typically only available on electric ranges since it's impossible to have a flame coiled around a convection fan in the same way an electric element could be. What is a French top cooktop?

It's 24x24 of heavy flat cast iron or rolled steel with a high-powered gas burner is under the flat top. The center of the top typically has an 8 to 9-inch removable ring with additional rings surrounding it. The center ring is the hottest location and can be removed for high-temperature cooking with a wok. The heat weakens as you move away from the center ring, so the outer ring area is good for simmering soups and the outer edges are perfect for melting butter and chocolates.
